In order to make the food product safe, generally, ethanol is mostly used as a solvent agent since it is non-toxic in nature as compared to other solvents. The oleoresin so obtained are highly concentrated having more flavoring ingredient that are soluble in specific solvent that makes it a resemblance of original flavor and odor of clove.
